Ingredients
- 250 g green peppers
- 1 organic chicken breast (about 200-250g)
- 1 green onion
- 3 slices ginger
- 2 eggs
Instructions
- Slice the chicken breast into thin strips about the same size as the green pepper strips. Place the chicken in a bowl and add 2 g salt, 2 g sugar, 1 teaspoon light soy sauce, 1 teaspoon cooking wine, and a pinch of white pepper. Mix well, then add 1 teaspoon cornstarch and toss until the chicken is evenly coated. Add another 1 teaspoon oil and mix a couple more times so the oil coats the surface of the chicken. Set aside.
- Remove the seeds from the green peppers and cut them into thin strips. Finely chop the scallion and garlic, and cut the ginger into thin strips.
- Heat a wok or skillet, then add oil to the hot pan. Add the scallion, ginger, and garlic, and stir-fry until fragrant.
- Add the chicken and spread it out in a single layer. Don't stir immediately; let it cook until the bottom changes color, then flip the chicken to cook the other side. Stir-fry a few more times.
- When the chicken is about halfway cooked, add the green pepper strips and stir-fry. If the pan looks too dry, add 1 teaspoon of water, cover, and cook for 1–3 minutes.
- Add salt to taste and stir well. Serve immediately.
