  1. Wash the loofah (Chinese luffa), peel it, and cut it into rolling wedge chunks (diagonal bite-sized pieces). Finely chop the scallion and ginger. Beat 2 eggs with a little ground pepper and set aside.
  2. Heat a wok or pan with oil. Pour in the beaten eggs, scramble until cooked, then push the eggs to one side of the pan.
  3. Add 1 teaspoon of oil to the pan. Add the scallion and ginger, and stir-fry until fragrant.
  4. Add the loofah and stir-fry evenly. Add 1 tablespoon of water, cover the pan, and cook over high heat for 2–4 minutes until the loofah becomes translucent. Add salt to taste, stir well, and serve.
