About This Recipe

A smarter way to plan weeknight dinners

For busy working families, a little preparation goes a long way. Cook a larger batch of Sichuan minced pork topping, divide it into meal-sized portions, and refrigerate or freeze for later use. When dinner time gets hectic, simply cook fresh noodles and add the prepared topping for a flavorful homemade meal with minimal effort.

Ingredients

Instructions

  1. Prepare the aromatics: Finely mince the ginger, garlic, and onion. Prepare 1 star anise.
  2. Cook the minced meat: Heat oil in a pan. Add the star anise and onion, and sauté until fragrant. Add the minced garlic and ginger, and stir-fry until fragrant. Add 500 g of minced meat and cook over medium heat until the meat changes color.
  3. Prepare the sauce for meat: In a bowl, combine:
    2 tablespoons miso paste
    1–2 tablespoons light soy sauce
    1 tablespoon sugar
    ½ tablespoon dark soy sauce
    1 cup water
    ¼ teaspoon sesame oil
Stir until the miso paste has dissolved completely.
  4. Simmer the meat sauce: By this stage, the minced meat should have released its fat. Pour the prepared sauce into the pan and stir well to combine. Simmer over medium heat until most of the liquid has evaporated and the oil becomes clear rather than cloudy. Remove from the heat.
  5. Cook the noodles and prepare the toppings: While the meat sauce is simmering, cook the noodles in a separate pot. Prepare your noodle seasonings and preferred toppings. There is no need to add oil to the noodles, as the fat from the minced meat sauce provides enough oil.
  6. Assemble and serve: Once the meat sauce is ready, add 2–3 tablespoons of the minced meat sauce to the cooked noodles. Toss well to coat the noodles evenly, then serve and enjoy!
