Chicken Broccoli

A quick and healthy Chinese home-style dish made with tender chicken and crisp broccoli. Unlike the thick, glossy sauce often found in American Chinese takeout, the traditional home-style version is lightly seasoned and stir-fried without a heavy sauce, allowing the fresh flavors of the chicken and broccoli to shine. It comes together in about 15 minutes and makes an easy, lighter alternative to takeout.

Broccoli chicken is a popular dish in American Chinese restaurants. But the way it is usually served in the U.S. is not quite how we make it at home in China.

The Chinese home-style version is simple and light. There is no thick sauce. The chicken and broccoli are stir-fried with simple seasonings, so you can really taste the ingredients.

I also created a saucy version for those who love the American takeout-style broccoli chicken. So you can choose whichever you like—or try both.

Either way, making it at home takes about 15 minutes and is a lighter, healthier choice than takeout.

  1. Mince the garlic and cut the ginger into diamond-shaped pieces. Cut the broccoli into small florets and the carrot into diamond-shaped pieces. Slice the chicken breast.
  2. Bring a pot of water to a boil. Add the broccoli and carrots, and blanch for 1–3 minutes.
  3. Add 2 g salt, 1/2 tsb sugar, a pinch of white pepper power, 1 teaspoon of cooking wine, and 1 teaspoon of cornstarch to the chicken. Mix well, then add 1 teaspoon of oil to seal in the moisture.
  4. Heat oil in a pan. Add the ginger and garlic and stir-fry until fragrant. Add the chicken and let it cook undisturbed until it starts to change color, then flip and cook the other side. Once the chicken is about halfway cooked, add the blanched broccoli and carrots. Add soy sauce and stir-fry everything together.

    If the pan looks too dry, add 1 teaspoon of water. Once the chicken is fully cooked, season with 3g of salt and 1 teaspoon of soy sauce, mix well, and serve.
