About This Recipe

Sweet and sour pork ribs are a comforting homemade dish with a delicious balance of sweetness and tanginess. This family-style version keeps the cooking process simple—there is no need to deep-fry the ribs first.

Instead, the ribs are coated in a mixture of sugar and water and browned in the pan. Ginger, garlic, and scallions add fragrance, while soy sauce and cooking wine build the savory flavor. The ribs are then slowly simmered until tender, allowing them to absorb the sauce.

The result is tender, flavorful pork ribs with a rich sweet-and-sour taste. Serve them with a bowl of steamed rice for an easy and satisfying family meal.

Ingredients

Instructions

  1. Prepare the pork ribs: Cut about 500g of pork ribs into pieces. Rinse to remove any blood, then pat dry with paper towels.
  2. Prepare the aromatics: Lightly smash 10 g of ginger and 4–5 garlic cloves. Cut the scallions into sections.
  3. Melt the sugar: Add 2 tablespoons of sugar and 1½ tablespoons of water to a pan. Heat over medium heat until the sugar dissolves and large bubbles form.
  4. Brown the ribs: Add the pork ribs and stir to coat evenly with the sugar mixture. Let one side turn golden brown, then flip and brown the other side.
  5. Add the aromatics: Add the ginger, garlic, and scallions. Stir-fry briefly until fragrant.
  6. Simmer: Pour in enough boiling water to just cover the ribs. Skim off the foam, then add 1 tablespoon of soy sauce and 1 tablespoon of cooking wine. Cover and simmer over medium-low heat for about 1 hour, turning the ribs once halfway through.
  7. Reduce the sauce: After 1 hour, check the liquid. If there is still too much, uncover and cook over high heat to reduce the sauce.
  8. Season and serve: Add ½ teaspoon of salt, ¼ teaspoon of white pepper, and 1 tablespoon of vinegar. Stir well to coat the ribs with the sauce. Transfer to a serving plate and sprinkle with toasted white sesame seeds.
