About This Recipe

Shredded Pork with Young Ginger may not be a dish you often see outside of China, especially in American Chinese restaurants. But in Sichuan, it’s a beloved summer dish.

Tender pork, fresh young ginger, and a few simple ingredients come together to create a dish that’s savory, fragrant, slightly spicy, and incredibly refreshing.

This is the kind of simple, everyday Sichuan cooking that deserves to be remembered and shared. I don’t want this recipe to get lost. ❤️

Ingredients

Instructions

  1. Wash 200 g of young ginger and cut it into thin strips. Remove the skin from the pork belly and cut it into thin strips. Mince 3 cloves of garlic and set aside.
  2. Heat a wok and add a small amount of oil to coat the surface. Add the pork strips and spread them out evenly. Do not stir immediately—wait until the pork changes color, then flip and cook the other side. Once the other side has also changed color, stir-fry until the pork releases its oil.
  3. Push the pork to one side of the wok and tilt the wok so the excess fat collects on the other side. Add the minced garlic and stir-fry until fragrant. Then add the doubanjiang (fermented broad bean chili paste) and stir-fry until the oil turns red.
  4. Stir the pork together with the red chili oil until evenly coated. Add the sliced young ginger and continue stir-frying until the ginger softens slightly. Add 1 teaspoon sugar, 1 teaspoon soy sauce, and salt to taste. Stir well and serve.
