  1. Prepare all the ingredients listed in the recipe and wash them thoroughly.
  2. Finely mince the scallions and ginger, then set them aside.
  3. Crack the eggs into a bowl, add a little salt and pepper, and whisk until well combined.
  4. Place the ground meat in a bowl. Add 1 gram of salt, 2 grams of sugar, 1–3 tablespoons of water, 1 teaspoon of light soy sauce, and half of the minced scallions and ginger prepared earlier. Mix well until the mixture becomes sticky, then set aside.
  5. Peel the luffa, slice it, and set aside.
  6. Heat the wok and add oil. Pour in the beaten eggs and stir-fry until cooked. Push the eggs to one side of the pan.
  7. Add the remaining minced ginger and some of the scallions. Stir-fry until fragrant, then pour in boiling water. If boiling water is not available, you can use cold water instead.
  8. Add the luffa slices, cover the wok, and cook for 2 minutes.
  9. Use a spoon to scoop the meat mixture into the pot, one spoonful at a time. Cover and cook until the meatballs are fully cooked, about 3 minutes.
  10. Before serving, add salt to taste and the remaining scallions. Stir well and serve hot.
