This recipe combines thinly sliced chicken and fresh broccoli in a light, savory sauce made with ingredients such as soy sauce, garlic, ginger, and a touch of sesame oil. The chicken is quickly stir-fried until tender, while the broccoli stays bright and slightly crisp. Unlike the thick, glossy sauce often found in American Chinese takeout, this version uses a lighter sauce that complements the natural flavors of the chicken and vegetables. It comes together in about 15–20 minutes and is delicious served with steamed rice.
Ingredients
- 1 organic chicken breast (about 200-250g)
- 150 - 200 g Broccoli
- 2 chops carrot
- 1 1/2 tsb suger
- 1 tbsp oyster sauce
- 1 tbsp soy sauce
- 1/2 tsb White Pepper powder
- 1 1/2 tsb cornstarch
- 1/4 tsb sesame oil
- 1/4 cup water
- 2 g salt
Instructions
- Mince the garlic and cut the ginger into diamond-shaped pieces. Cut the broccoli into small florets and the carrot into diamond-shaped pieces. Slice the chicken breast.
- Bring a pot of water to a boil. Add the broccoli and carrots, and blanch for 1–3 minutes.
- Add 2 g salt, 1/2 tsb sugar, a pinch of white pepper power, 1 teaspoon of cooking wine, and 1 teaspoon of cornstarch to the chicken. Mix well, then add 1 teaspoon of oil to seal in the moisture.
- In a bowl, add 1 teaspoon of sugar, 1 tablespoon of oyster sauce, 1 tablespoon of light soy sauce, 1/2 teaspoon of white pepper powder, 1 1/2 teaspoons of cornstarch, 1/4 teaspoon of sesame oil, and 1/4 cup of water, then mix well and set aside.
- Add oil to the wok, put in ginger and garlic, and stir-fry until fragrant. Then, add the chicken and do not flip it immediately. Wait until it changes color before flipping to the other side. When the chicken is halfway cooked, pour in the blanched broccoli and carrots.
- After stirring the sauce well, pour it into the pot and stir-fry. Once the sauce coats the chicken and broccoli, it can be removed from the heat and plated.
